Zucchini Soup

Large onion – diced                                         1

Apple – peeled, cored and diced              1

Canola oil                                                             2 tblsp

Curry powder                                                    1 tsp

Chicken stock                                                    1 L

Zucchini – chopped                                         3

Rice – uncooked                                               ¼ cup

Rice milk                                                              1 cup

Heat oil in a large pot then add onion and apple.  Fry for 3 minutes, then add curry and broth.  Bring to a boil and add zucchini and rice.  Reduce heat and simmer for 30 minutes.  Remove from heat and allow the soup to cool for 10 minutes.  Puree in blender or food processor.   Add rice milk just before serving.
