Canola oil ¾ cup
Red wine vinegar ¾ cup
Water 4 tbsp
Dijon mustard 4 tbsp
Green onions – chopped 8
Garlic cloves – minced 8
Salt 2 tsp
Pepper 1 tsp
Sugar 2 tsp
Fresh basil – chopped finely 2 cups
Red bell pepper diced 2
Tomatoes – diced 2
Chicken breast 6
Rotini (spiral pasta) 1 box (454 g)
Combine first 9 ingredients and mix well. Set aside just enough to brush on chicken. Cook chicken (broil or grill). Add basil to remaining dressing. Cook pasta according to directions on box and then rinse under cold water. Add red pepper and tomatoes and toss with dressing. Top with chicken and serve.
