Olive oil 2 tbsp
Onion – diced 1
Carrot – chopped 1
Celery stalk 1
Cabbage – chopped 1 ½ cups
Chicken stock 2 L
Be sure that the brand you are using does not contain any dairy or soy products. Campell’s Ready To Use Chicken Broth is one option.
Diced tomatoes 1 can (19 oz/540 mL) with liquid
Kidney beans 1 can
Garlic – minced 3 cloves
Fresh parsley – chopped 2 tbsp
Pasta shells – uncooked 1 ½ cups
Heat oil in a large pot and add onions, carrot, celery and cabbage. Cook for 5 minutes, stirring occasionally. Add broth and tomatoes with liquid. Bring to a boil, reduce heat and simmer for 15 minutes. Add pasta and cook uncovered for an additional 15 minutes. Stir in beans, garlic and parsley.
